Bolachas de Chocolate com Recheio de Hortelã




O desafio de Verão do Vamos Fazer Bolachas! encheu a blogosfera de bolachas recheadas de todas as cores e sabores!

Na cozinha do Cravo e Canela voltei a misturar o chocolate com a hortelã e surgiram estas flores de olhos verdes. Pelo meio está um recheio de cream-cheese e geleia de hortelã, pouco doce e que combina na perfeição com o sabor do cacau.








Ingredientes:
100 g de manteiga
75 g de açúcar
125 g de farinha
60 g de cacau em pó

(para o recheio)
2 colheres de sopa de cream-cheese
4 colheres de chá de geleia de hortelã

Misturar todos os ingredientes secos e juntar a manteiga cortada em cubos. Esfarelar a manteiga e incorporar com os restantes ingredientes até obter uma massa homogénea que não se agarra nas mãos. Se refrigerar a massa durante cerca de uma hora facilita a realização das bolachas. Cortar com a forma da sua preferência e, em metade das bolachas, cortar uma forma no centro, formando uma "janela" por onde se vai ver o recheio. Colocar as bolachas num tabuleiro forrado com papel vegetal. Levar a cozer em forno aquecido a 180ºC. Quando começar a cheirar a chocolate e a massa perder o brilho as bolachas estão prontas. Retirar do forno e deixar arrefecer. Com as bolachas frias, preparar o recheio, misturando o cream-cheese com a geléia de hortelã. Colocar um pouco de recheio sobre a bolacha sem a "janela" e colocar uma bolacha com "janela" por cima. Com este recheio costumo guardar no frigorífico, pois não sei se o queijo creme resiste sem se estragar à temperatura ambiente. Em alternativa, poderão rechear apenas com a geleia.

Chocolate and Mint Sandwich Cookies



The Summer challenge of Let's Make Cookies! filled the blogosphere with cookies of all colors and flavors! 

In the kitchen of Cravo & Canela we mix chocolate with mint and these lovely flowers with green eyes emerged. The middle is a filling of cream cheese and mint jelly, just a little bit sweet, that blends perfectly with the flavor of cocoa. 

Ingredients: 
100 g butter 
75g sugar 
125 g flour 
60 g of cocoa powder 

(for the filling) 
2 tablespoons of cream cheese 
4 teaspoons of mint jelly 

Mix all dry ingredients together with diced butter. Crumble the butter and incorporate with the other ingredients until you get a smooth dough that does not hold in the hands. Cooling the dough for about one hour facilitates cutting the cookies. Cut to the shape of your choice, and in half the cookies, cut a shape in the center, forming a "window" through which you will see the filling. Place the cookies on a baking tray lined with parchment paper. Lead to bake in oven heated to 180 ° C. When you start to smell the chocolate and the dough lose their luster the cookies are ready. Remove from oven and cool. With the cold cookies, prepare the filling, mix the cream cheese with mint jelly. Place some filling on the cookie without the "window" and put a cookie with "window" on top. With this fillingI  usually keep in the fridge because I do not know if the cream cheese will spoil at room temperature. Alternatively, you can just fill with jelly.
