Aqui fica a minha...

Nettle Pasta with Ricotta and Cherry Tomatoes

Today marks the World Pasta Day  and  feels like the world has join in a common love for this delicious food! So, lets show this passion with the mutual sharing of recipes that enchant us. Here is mine ...

Since the day is special, requires a special pasta, with a less common or unusual ingredient. This little treasure brought from Italy meets all requirements and, moreover, is delicious .

The memories that most of us guard from nettles resume to sore hands and the image of a foliage we learned to know and avoid when we played on the field (yes, I 'm still from these days!). However I had heard of using nettles in cooking and when they I found these Tagliolini with Nettles could not resist!

Ingredients:
1 nettle tagliolini package (alternatively, a spinach pasta, for example)
1 onion
2 cloves of garlic
1 bay leaf
200 g cherry tomatoes
100 g of ricotta
1 bunch of basil
Olive oil, salt and pepper

Cook the pasta in boiling water seasoned with salt. When al dente, remove, drain and reserve. Mince the onion finely and sauté in olive oil along with the garlic cloves and bay leaf. Add the cherry tomatoes cut in half and half of the basil leaves roughly chopped. Let cook for a few minutes and add the pasta. Wrap carefully to absorb the flavors. Place in a serving dish and garnish with crumbled ricotta cheese and the remaining basil leaves. Serve immediately .

Happy World Pasta Day!
