Bolo Piña Colada



Mesmo sem ter as fotos que gostaria, esta é uma receita a partilhar pois o bolo que fiz para o aniversário do maridão é delicioso.

A combinação dos sabores do coco e do ananás / abacaxi é um clássico. Com rum, evoca, imediatamente, paragens tropicais, noites de luar e bebidas exóticas.

Pois, este bolo piña colada não fica atrás da bebida e pode ser uma excelente opção para o período de festas que se aproxima.







Ingredientes:
4 ovos
250 g de açúcar
75 ml de óleo vegetal
150 ml de leite de coco
4 colheres de sopa de rum
250 g de farinha
1 colher de sopa de fermento em pó
1/2 abacaxi / ananás
3 colheres de sopa de açúcar
150 ml de leite condensado
150 ml de natas
100 g de coco em flocos
500 ml de natas
4 colheres de açúcar
sumo de meio limão

Bater os ovos com o açúcar até obter uma mistura esbranquiçada. Juntar o óleo vegetal e continuar a bater. Acrescentar o leite de coco e o rum e misturar bem. Por fim, adicionar a farinha misturada com o fermento e envolver cuidadosamente. Untar e polvilhar com farinha uma forma redonda. Levar a cozer em forno aquecido a 180ºC. Uma vez cozido, retirar do forno e deixar arrefecer. Cortar o bolo ao meio para rechear. A parte de cima do bolo pode ter de ser aparada caso não esteja perfeitamente direita. Utilizar esta metade na base do bolo recheado e reservar a parte de baixo do bolo para o cimo, devendo o fundo ficar voltado para cima. Enquanto o bolo arrefece, preparar a calda com que irá regar as duas metades do bolo. Cortar o abacaxi em pedaços pequenos, descartando a parte central mais fibrosa. Numa caçarola, levar ao lume juntamente com as três colheres de açúcar. Tapar e deixar cozinhar durante alguns minutos. Coar a calda que se formou e regar as duas metades do bolo. Reservar os pedaços de abacaxi. Num recipiente, misturar o leite condensado, os 150 ml de natas e 75 g de flocos de coco, até obter um creme espesso. Num prato de servir colocar a base do bolo (é melhor regar com a calda depois de estar no prato) e colocar o recheio preparado sobre o bolo, espalhando de modo uniforme, mas sem chegar até à beirada. Cobrir com os pedaços de abacaxi. Sobrepor a segunda metade do bolo, já regada com a calda. Para finalizar, preparar o creme de chantilly batendo os 500 ml de natas (que devem estar bem frios) com o açúcar e o sumo de limão (cujas quantidades deverão adaptar ao vosso gosto) até que estejam bem firmes. Começar por, com uma colher ou espátula pequena, encher os espaço entre as duas camadas de bolo. Quando este estiver uniforme, distribuir o creme pelo topo e laterais do bolo numa generosa camada. Neste bolo gosto desta superfície irregular que, depois, polvilhei com o resto dos flocos de coco, mas os mais habilidosos poderão decorar com seringa, fazendo um trabalho mais sofisticado. Guardar no frigorífico até servir. Deliciem-se!

Piña Colada Cake


Even without the photos I would like, this is a recipe to share, for the cake I made for hubby 's birthday last week is absolutely delicious.

The combination of flavors of coconut and pineapple  is a classic. With rum, evokes immediately tropical moonlit nights and exotic drinks.

This piña colada cake is not far behind the drink with the same name and can be an excellent option for the holiday season approaching.


Ingredients:
4 eggs
250 g sugar
75 ml of vegetable oil
150 ml of coconut milk
4 tablespoons of rum
250 g flour
1 tablespoon baking powder
1/2 pineapple
3 tablespoons sugar
150 ml of condensed milk
150 ml of fresh cream
100g flaked coconut
500 ml of fresh cream
4 tablespoons sugar
juice of half a lemon

Beat the eggs with the sugar until the mixture is white. Add the vegetable oil and continue to beat. Add the coconut milk and rum and mix well. Finally, add the flour mixed with baking powder and wrap carefully. Grease and lightly flour a round baking pan. Bake in oven heated to 180 degrees celsius. Once cooked, remove from oven and let cool. Cut the cake in half to fill. The top of the cake may need to be trimmed if not perfectly straight. Use this half as the base of the cake and reserve the bottom of the cake to the top, the fund should be facing upward. While the cake cools, prepare the pineapple syrup to drizzle  both halves of the cake. Cut the pineapple into small pieces, discarding the core. In a saucepan, bring to the boil along with three tablespoons of sugar. Cover and cook for a few minutes. Strain the syrup and distribute in the two halves of the cake. Reserve the pineapple chunks. In a bowl, mix the condensed milk, 150 ml of cream and 75 g of coconut flakes until thick and creamy. In a serving dish place the base of the cake ( it is best to water with the syrup after being in the dish ) and place the coconut prepared  over the cake, spreading evenly, but without reaching to the edge. Cover with the pineapple chunks. Overlap the second half of the cake, drizzled with the syrup already. Finally , prepare the whipped cream by beating the 500 ml cream (which should be very cold ) with sugar and lemon juice ( you may adjust to your taste ) until they are firm. Begin to fill the space between the two cake layers with a small spoon or spatula. When this is done, uniformly distribute the cream on the top and sides of the cake in a generous layer. I like this uneven surface that I sprinkled with the rest of the coconut flakes, but the most skilled of you can decorate with syringe doing more sophisticated work. Refrigerate until serving. Enjoy it!

    1. Olá. Para ficar sem lactose só tens de substituir as natas no chantilly. Sei que já há umas natas de soja, só não sei se armam quando batidas.
      Mas mesmo sem chantilly é uma delícia.
